i pretty much have not been doing weekly menus. which means i pretty much go to the grocery store everyday to get stuff for dinner that night. such a waste of time. i need to get my act together.
i have been itching for fall the past couple weeks so i have been cooking more comfort food. this is my mothers chicken noodle soup recipe; i love the flavor of this broth!:
3 to 4 boneless chicken breasts
4 cups water
6 medium carrots, sliced
6 medium stalks of celery, sliced
1 T. salt
1 T. monosodium glutamate (optional)
1 1/2 tsp. sugar
1/3 tsp pepper
5 chicken bouillon cubes
3 cups uncooked thin egg noodles
heat all ingredients except noodles to boil, reduce heat. cover and simmer until chicken is done, about 45 minutes. skim fat if necessary.
cook noodles separately (i cooked the noodles in the broth for the last 11-12 min and added more water). remove chicken from broth, cool slightly. cut chicken into 1" pieces (i shredded mine because i like it more rustic). add chicken and drained noodles to broth; heat until hot, about 5 minutes.
