another beloved kraft recipe. we really like this jello pie and it is really easy. we make it every year for the erk thanksgiving. i have added an option below to make it a turtle pumpkin pie.
1 graham pie crust (6 oz.) (i made my own)
2 pkg. (3.4 oz. each) jello vanilla flavor instant pudding
1 cup cold milk
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) cool whip whipped topping, thawed, divided
i prepare my own my crust. i just used the recipe off the graham cracker crumb box.
next; beat jello, milk, pumpkin, cinnamon and nutmeg in large bowl with whisk until well blended. stir in 1-1/2 cups cool whip (or homemade whipping cream); spoon into crust.
refrigerate 1 hour. top with cool whip (i made my own whipping cream. see recipe here ; and i added 3/4 tsp. of cinnamon to the whipping cream).
turtle pumpkin pie option:
here are some things that the original recipe calls for that we leave out. kimball likes his pie simple. i have tried to frill it up and he doesn't really go for it.
*after you have prepared the crust, pour 1/4 cup caramel into the bottom of the crust and sprinkle with 1/2 cup chopped pecans. then spoon filling over the top. you can also top the whip cream with the chopped pecans as well.*
This sounds delish! Do you use cool whip in the pie and home made on top? Or do you put the homemade whip cream in the pudding too? Homemade sounds way better all around, I'm just wondering if the pudding needs the cool whip to thicken.
ReplyDeleteYes Kenz I do coolwhip in the jello because it is thicker. And then homemade on top. I'll have to try real whipcream in the filling one of these days and see how it turns out.
ReplyDeleteI have a cheesecake recipe that is the same way. I've used the homemade whip cream in the filling and it tastes great but doesn't set quite as well or hold its shape. But look what I just found: http://bakedbree.com/whipped-cream. Do you use anything like this? I can't wait to try it!
