Steak

I never feel like I should post, because I never have pictures! Oh well. I'll try to remember to snap some in the future.

A few months ago I stumbled across this method for grilling steaks. We have used it several times since with amazing results until this last week (it was good but not as great as before).

Since this is a method more than a recipe I'll include the basic steps and some tips.

1. Start with a good (not great, but not cheap) thick cut of meat. The first few times we tried this I used the cheapest cut of costco steak I could find and it was great! This last time I bought a cheap cut at target and it did not turn out nearly as well. I think the quality at costco made the difference. The target steak was just too cheap.

2. 1-2 hrs before serving remove meat from fridge and heavily salt both sides with sea salt/canning salt.

3. Let meat rest at room temperature for 1 hr per inch of thickness (ex: 90 min for 1 1/2 inch steak).

4. Rinse meat VERY well. And pat dry completely with paper towels. The meat will already be very tender. Make sure to remove all the salt and dry the steak completely.

5. Grill on high to desired doneness.

6. Let steaks rest at least 5 min. before eating.

I don't think we'll ever cook steaks another way. I can't wait to try this adding herbs and other flavoring during the salting process (like mentioned in the link).
