Cafe Rio Pork

I mixed a few recipes together and came up with a new one that we think is the simplest and best yet. It is pretty close to the real thing!

2 lb. pork roast
16-20 oz. coke
1 T. garlic salt
3/4 C. brown sugar
7 oz. red enchilada sauce
4 oz. diced green chiles

Place roast in the crockpot. Sprinkle with garlic salt and 1/4 C. brown sugar. Cover 1/2-2/3 of the way with coke. Cook on low for 6 hrs.

In a blender or food processor blend remaining 1/2 C. brown sugar, enchilada sauce, green chiles and remaining 1/2 C. coke until smooth.

Remove roast from crockpot and drain liquid. Return to crockpot and shred with 2 forks. Pour in blended sauce and mix well. Cook on low for another 1-2 hrs.

  2. This was way simpler than the old recipe I was using and I think i tastes more like the real thing! Try it out.
