(we usually only make the pizza and rolls, so that is all i have pics of).
dough:
(this is a half batch, because that is how you have to make it in a kitchenaid mixer. if you have something bigger like a bosch, you can double this.)
5 1/4 cups bread flour (not all-purpose)
1/4 sugar
1/2 Tbsp. salt
1 1/2 rounded Tbsp. of Saf-Instant Yeast
1 1/2 Tbsp. liquid lecithin (you can buy this at any health food store)
2 cups HOT tap water
mix dry ingredients. add lecithin (don't try to measure in a spoon cause its really sticky, just squeeze one quarter size glob and one dime size glob) and water, mix for one minute. check consistency. add more water if needed, from a few Tbsp. to 3/4 cup of water (i almost always have to add 3/4 cup more water). dough should be very sticky. mix for 5 minutes. do not add flour after dough is finished mixing.
*each dough batch can make two things. like pizza & rolls, or two loaves of bread, etc.*
for bread:
shape loaves in greased pan and cover with dish towel. let raise 25 min. bake at 350 for 25 min.
for pizza:
spray counter and pizza stone with pam. roll out dough and top with desired pizza sauce, cheese and toppings. bake at 425 for 15-20 min.
*no rising needed*
for rolls:
shape rolls and raise 35 min on greased cookie sheets. dip in butter and shredded parmesan cheese. bake at 350 for 12-15 min.
so easy, fast and pretty delicious. the other thing i love about this recipe is once i figured out the cook times for each of these things in my oven. it has never changed. the dough is not finicky at all! like i know my pizza goes exactly 18 min, and it comes out perfect every time. enjoy.
