i love this cookie recipe that i got from reagan. they are cute and fun.
1/2 cup melted butter
3/4 cup sugar
1 tsp. vanilla
2 beaten eggs
2 Tbsp. cocoa
1 1/4 cup flour
melt butter and mix in sugar, vanilla and eggs. add cocoa and flour. cook in waffle iron on med low for about 4-7 min depending on your iron. (my waffle iron doesn't have settings and is very hot so i only did mine about 3 min each). you may need to do a couple test runs.
turtle frosting:
melt 1/2 cup butter in small sauce pan till bubbly. remove from heat. add 4 shakes of salt, 1 tsp. vanilla and 1 heaping Tbsp. of cocoa. stir out lumps with spatula. then add 1 1/2 cups powdered sugar and 1 Tbsp. milk. mix in mixer. continue to add powdered sugar and milk until desired consistency. i think i did about 3/4 bag of powdered sugar and 2 Tbsp. milk.
*from my experience w/ this recipe. either double the cookie portion or half the frosting. the cookie portion makes about 10-12 cookies and the frosting is probably enough for 24 cookies. *
we rate this 10/10!
Meliss I used almost this exact frosting recipe for cupcakes at my sisters shower. It was SO good. The only difference was that I softened the butter instead of melting it.
