I love soup, but FL temperatures don't really allow for it most of the time. The temperature dropped today (the low was 53- haha!) so I took the opportunity to make some. This recipe came from my mother-in-law's ward cookbook. It was a new recipe and we thought it was pretty good.
Wild Rice Soup
1 package Uncle Ben's Wild Rice w/ Seasoning
5 C water
8 oz. cream cheese softened (I used neufchatel- fat free would have been even better)
1 can cream of chicken soup
1/8 tsp. salt
1 C shredded carrots
1 C broccoli florets
Combine wild rice, seasoning packet, and water in a large pot. Bring to a boil. Cover and reduce heat. Simmer for 20 min. Meanwhile shred carrots and cut broccoli. Add cream cheese, soup, and salt to rice mix. Stir until melted. Add vegetables. Cook for 10-15 min until veggies are tender.
We ate this with french bread from Costco. It was the small frozen loaves that you bake for about 10 min. We just discovered them and LOVE them. Fresh, quick bread any night of the week!
