Nut-Crusted Tilapia

I am not much of a fish eater, but my husband is and he is trying to convince me to eat more of it. Since it is pretty good for you I'm trying to incorporate more of it in our diet. Right now the only fish I can stand is tilapia. It is really mild and doesn't taste like fish at all (it doesn't taste like much of anything actually!) I don't have many fish recipes but I tried this out from kraft foods with a few modifications. We liked it and will probably have it again.

Makes: 3 servings
1 Tbsp. Spicy Brown Mustard
1 Tbsp. Light Mayo
1/8 tsp. garlic salt
1/8 tsp. ground black pepper
1/2-3/4 lb. tilapia fillets (we buy frozen tilapia at costco shrink wrapped in individual filets- minimal handling for me!)
1/3 cup cashews, chopped
Preheat oven to 400°F. Mix mustard, mayo, garlic powder and pepper until well blended. Place fish in single layer on lightly greased baking sheet; spread evenly with the mustard mixture. Sprinkle with the chopped nut mix. Bake 12 to 15 min. or until fish flakes easily with a fork.
