Chicken Parmigiana Sandwiches.


1/2 cup chopped onion
1 clove garlic
1 tbsp. olive oil
1 lb boneless skinless chicken breast chopped
2 cups buttermilk
1 can Italian bread crumbs
1/3 cup grated Parmesan cheese
1/3 jar marinara sauce
grated mozzarella cheese
5 pieces of flatbread

Heat oil in large skillet. Add onion and minced garlic, cook until onions are soft. Mix 1/3 can of Italian bread crumbs and grated Parmesan cheese and set aside in bowl. Dip uncooked chopped chicken in buttermilk and then roll in bread crumb mixture. Fry in skillet with oil, garlic and onions. Season with salt and pepper. Add marinara sauce and bring to low boil. Top with mozzarella and heat until cheese is melted.

Slice flatbread in half and fill with chicken parmigiana mixture. Place sandwiches on baking sheet and cook at 375 for 15-20 min, or until heated through.
