Cajun Chicken Pasta

1 lb. chicken breast
1 T olive oil
2 cloves garlic minced
2 cups chopped veggies (I use red bell peppers and mushrooms)
Cajun Seasoning (mine is 'Emeril Bayou Blast')
1 C cream
1/4 C shredded parmesan
16 oz. package of pasta cooked

Season chicken with bayou blast and grill. Cut into bitesize pieces. (you can also cut it first and saute before adding veggies)

Saute garlic and veggies in olive oil. Add chicken. Add cream and simmer. Season with bayou blast to taste (I like it spicy so I use a lot). Add parmesan and stir until melted. Serve over pasta with extra parmesan for garnish.
