chicken pot pie

this is probably one of my favorite recipes that i have made lately. it is pretty simple, plus the end result is sooo yummy!

for this recipe you will need:
1 box of pillsbury pie crusts ( you can make your own, but these ones save you some time)
1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 teas salt
1/4 teas pepper
1 3/4 cup chicken broth
1/2 cup milk
2 1/2 cups cooked and shredded chicken
2 cups mixed veggies thawed
- set pie crusts out of the fridge to soften
-melt butter on medium heat, add onion and cook for 2 minutes
- add flour, salt and pepper
- gradually add chicken broth and milk, cook till thick and bubbly
-add chicken and mixed veggies to gravy
- press one of the crusts into a pie dish, and pour chicken mixture into pie shell
-layer the second crust on top and fold the extra edge under the bottom edge and flute
-cut slits in the top
-bake at 425 for 15 minutes, take out and place strips of foil over the edges of pie (so they won't burn) and place back in the oven for an additonal 15-20 minutes 
-let cool for 5-10 minutes and enjoy!
