Crock Pot Loaded Potato Soup

I found this recipe on pearls-handcuffs-happyhour.blogspot.com

It was really easy. I love crock pot recipes! It was good, but not great. I think I'll make it again sometime using good quality chicken broth (this time I used boullion and water and I think that affected the flavor).

Crock Pot Loaded Potato Soup

Soup ingredients:
30 oz. bag of frozen shredded hashbrowns
1 can cream of chicken soup
3 14oz cans chicken broth
1/2 cup onion, chopped
1/4 t. black pepper
8 oz. cream cheese (I used low fat and it worked fine)

Toppings:
Shredded cheddar cheese
Crumbled bacon
Sliced green onions
Sour Cream
Etc.

Add all soup ingredients except the cream cheese to the crock pot. Cook on low for 8 hrs. or high for 4. 1 hour before serving stir in the cream cheese (I cubed mine for easier melting) and continue to cook. Serve topped with baked potato toppings.
