These are rrrrealllly not good for you (2 sticks of butter, cream cheese, and 4 cups of sugar- yikes!!) But they are delicious! I improvised on the ingredients a little because these were a last minute dessert idea. I used a butter pecan cake mix, sliced almonds (that I crushed up a little) and a little bit extra almond extract. Mine also never thickened quite like the instructions and it didn't brown (except around the edges). They are so good and the name is descriptive... They are really gooey! Yum!
Crust:
1 yellow cake mix
1 stick butter melted
1 large egg
1/2 cup slivered almonds
1 tsp almond extract
Filling:
8 oz cream cheese (room temp)
2 large eggs
1 tsp almond extract
1 stick butter melted
3 3/4 cup powdered sugar
Preheat oven to 350 degrees
Mix the crust ingredients for 2 minutes (with electric mixer) until smooth
Pat evenly in the bottom of a 9 x 13 and set aside.
Beat cream cheese until fluffy.
Then add eggs, extract, and butter. Beat 1 minute.
Next add the powdered sugar and beat for 1 more minute until it becomes a nice whipped taffy texture.
Pour the filling over the crust. Smooth it out, and put it in the oven @ 350 degrees for 45-47 minutes. When it's done the top will be brown and very crispy. Let cool completely before cutting into squares.
