white bean chicken chili.

it was raining today, so i figured i'd get one of my last comfort dishes in for the season.




Ingredients:

* 1 tablespoon olive oil
* 1 medium onion, chopped
* 1 garlic clove, minced
* 3 chicken breasts, cooked and chopped or shredded
* 12 ounces of frozen corn, white or yellow
* 2 (15 ounce) cans Great Northern Beans, undrained
* 1 (7 ounce) can of diced green chilies
* 1/2 teaspoon cumin
* 1/2 teaspoon coriander
* 1/2 teaspoon oregano
* 1/4 teaspoon cayenne pepper (optional)
* 3 cups chicken broth
* 3 tablespoons fresh lime juice (i did 4)

Directions:

in a large skillet saute onion, garlic and olive oil. add raw chicken and fry in this mixture. shred chicken. in large pot combine chicken mixture, corn, beans, green chilies, spices chicken broth and fresh lime juice. bring to a boil. turn down heat and simmer for 20-30 minutes.

we served with a heaping pile of mozz. cheese and a dollop of sour cream. you can also serve with tortilla strips, salsa, etc. love this because it's easy, healthy and can feed quite a few people.
