BBQ Chicken Pizza/ Pizza On The Grill

About 90% of the time that we eat pizza at our house we make it on the grill. We love it that way, and I especially love it because my husband does 1/2 of the work! Last week we had BBQ chicken pizza with Sweet Baby Rays BBQ sauce (the BEST!), grilled chicken, sauteed red onions, chopped cilantro and cheese. It's our favorite, but you can make pizzas on the grill with any sauce/toppings combination. Here is how we do it:

Make dough. I use this recipe or another even simpler one. Any dough is fine. I usually replace 1/2 of the flour with wheat flour.

While dough rises prepare any toppings (grill chicken, chop veggies, etc.)

Spray the bottom side of a cookie sheet with cooking spray and sprinkle with cornmeal. Roll dough out on sheet. Spray the top of the dough with cooking spray and sprinkle with cornmeal.

Flip dough onto grill heated to med-low (this is actually a guess because my husband does the grilling). Cook for about 7-10 minutes until the bottom side is lightly browned. Use a large spatula to flip the dough back onto the cookie sheet, grilled side up.

Add sauce and toppings to the grilled side of the dough.

Use spatula to slide pizza uncooked side down onto the grill. Cook with the lid down for another 10 min or so, until the underside of the dough is cooked and the cheese is melted.
