this meal is very very easy...
it is soo yummy and hearty as well.
(my hubby added the lovely glass of pomegranate 7up)
for the chicken: we LOVE the schilling baja citrus marinade, i usually just make it according to the directions on the package and let it sit overnight or for a few hours.
for the asparagus: wash and cut the stocks, place in a casserole dish and pour just a little bit of olive oil over the top, then sprinkle some dill weed and some season salt and bake in the oven at 350 degrees for about 15-20 minutes.
for the red potatoes: cut up about 6-7 regular size red potatoes into chunks. mix with 1/3 cup olive or veggie oil and one packed of lipton onion soup mix. place in casserole dish and cook at 425 degrees for about 35 minutes.
thats it.... it's that simple!
