This post is really about the tortillas. The fish is just grilled tilapia seasoned with taco seasoning then flaked with a fork. We topped ours with guacamole, sliced radishes, cabbage, cheese, and lots of pico.
Again its not really a recipe but here it is. You need:
Small white corn tortillas
Oil
Large frying pan (I used one with high sides and it worked great)
Tongs
Lots of paper towels
Pour about 1/2-3/4 inch oil into pan. Place over medium heat. Working with 1 tortilla at a time place in oil and use tongs to fold in half. Using tongs flip to the other side when lightly browned. The longer you fry them the crisper they will be. Remove from oil onto plate lined with paper towels. Blot excess oil with paper towels. Repeat with remaining tortillas. Serve with any taco fillings/toppings.
They are SO good! You will never buy a store bought hard shells again.
